St-Yorre
St-Yorre is sourced from springs in the village of Saint Yorre, a few kilometres south of Vichy on the Allier river in Auvergne, central France. The springs were discovered in 1850 by a local landowner who identified their mineral character; he obtained an operating licence in 1859 and established the Compagnie Propriétaire des Sources Minérales de Saint Yorre. The water rises from the Vichy volcanic basin, a geological formation that produces some of the most mineralised naturally occurring waters known. St-Yorre is currently owned by Sources ALMA (formerly Roxane, formerly Groupe Alma), which also owns Vichy Célestins, Courmayeur, and other brands. St-Yorre holds natural mineral water status.

Mineral character
St-Yorre is the most heavily mineralised water in the TWD database and, by most measures, one of the most mineralised commercially available mineral waters in the world. Bicarbonate is 4,774 mg/L; sodium is 1,708 mg/L; chloride is 329 mg/L; sulphate is 174 mg/L; calcium is 90 mg/L; magnesium is 11 mg/L. Total hardness is 270 mg/L as CaCO₃; alkalinity is 3,916 mg/L as CaCO₃. TDS is approximately 4,774 mg/L as measured by the evaporation residue method at 180°C (the sum of individual ions is substantially higher, as bicarbonate partially decomposes during evaporation). The alkalinity-to-hardness ratio of approximately 14.5:1 is the most extreme in the database, driven entirely by sodium bicarbonate. At 4,774 mg/L bicarbonate alone exceeds the total TDS of almost every other water in the database. For blending or dilution, St-Yorre should be treated with even greater care than Vichy Célestins: very small volumes shift alkalinity substantially.
