CAPI is sourced from mineral springs in Black Mount in the Central Highlands of Victoria, Australia. The springs sit within an ancient volcanic formation; the company describes the water as filtered through the geology of an extinct volcano in the Central Highlands. CAPI was founded by Pitzy Folk in 2011 in Melbourne with a focus on glass-only bottling and the hospitality sector. The brand has grown to over 7,000 retail and hospitality stockists across Australia and parts of Asia. CAPI holds natural mineral water status.

Mineral character

CAPI is a moderately mineralised water with an unusual calcium-to-magnesium ratio. Bicarbonate is the highest ion at 200 mg/L; unusually, magnesium (29 mg/L) exceeds calcium (20 mg/L), a reversal of the normal pattern in which calcium substantially outweighs magnesium. Chloride is relatively elevated at 56 mg/L for a still water, giving a chloride-to-sulphate ratio of roughly 9:1. Sodium is 31 mg/L; sulphate is 6 mg/L. Total hardness is 169 mg/L as CaCO₃; alkalinity is 164 mg/L as CaCO₃. TDS is approximately 342 mg/L. The Mg > Ca inversion is shared by very few other waters in the database.
